Cooking with Saki

Hello, Blogfans! Is it rainy and cold at your house today, too? It's a frigid 50 here, and the rain is pouring from the sky in buckets. The sort of day that Axl Rose sings about. There's no better way to chase away that wet chill than a big bowl of Stuffed Pepper soup. It's a hearty soup, exceptionally filling, and inexpensive and easy to make.

So waterproof yourself and wade to the store, because you will need:

2lbs lean ground beef, browned
1 (28oz) can of tomatoes, chopped
1 (28oz) can of tomato sauce
2 cups of long grain rice, cooked
2 cups raw peppers, chopped - we usually do a mix of colors, but red and orange are our favs
1 large onion, chopped
2 cups beef broth
salt and pepper to taste

Combine all ingredients in your crockpot, set it to low, and walk away. Come back 4-6 hours later, and ladle yourself some delicious soup. Eat it with some crusty italian bread, and you'll be all set!
